  • The Vcolor 368 controller manages all the most advanced functions of the gourmet and pastry-making combination ovens, whether they are electric or gas powered and use direct steam injection or an external boiler. For even greater efficiency, an EVCO inverter can be added in the model Vcolor 369 to modulate the fan speed.
    The controller features a complete steam management system (direct generation, injection and discharge), including automatic and manual modes; if the steam is generated by an external boiler, it can also control functions such as filling and draining, boiler flushing and cleaning. It also manages the wash cycle using liquid or tablet detergent.
    Manufacturers can enter up to 72 OEM programs (divided into 4/8 categories), while the end user can store cooking cycle settings from the controller, creating up to 48 recipes. The controller's innovative programmable platform gives manufacturers the freedom to personalize the graphic skins and OEM recipes, as well as add new languages. All they have to do is compile an ODS file and upload it to the oven's controller using a flash drive, thanks to the USB port on the user interface.
    Users can interact with the device remotely, including starting/stopping the duty cycle, using the EPoCA® cloud platform with Wi-Fi or Ethernet connectivity (alternative or parallel control can also be achieved via MODBUS TCP).     Available in 5-inch or 7-inch split versions with a capacitive color TFT touchscreen graphic display, the user interface can be recessed from the front or flush mounted with the panel, making it fit perfectly into the design of the unit.
