The Vcolor 579 controller can be programmed by parameters to manage only the aging process, only the meat aging or both. It has 3 analog inputs for temperature, 1 analog input for a 4…20mA humidity sensor (can also be used to read pH), 9 fully configurable digital outputs (expandable to 13) and 1 modulating output that can control up to 10 evaporator fan speeds (the evaporator fans can also be modulated using an EVCO inverter).
The intuitive user interface (with 5 presets + 4 freely configurable food categories) can be personalized to suit the user's needs, making the controller both versatile and easy to use. The user has access to a total of 30 food plus aging and meat dry aging programs (each aging program has 30 consecutive stages, whose duration, temperature, humidity and ventilation are fully configurable). The controller also features manual saving cycles, automatic air exchange and pause/work cycles as well as optional sanitation cycles (with UV lamps or ozone) and product smoking cycles, which can be managed automatically or manually.
The controller’s innovative programmable platform gives manufacturers the freedom to personalize the graphic skins and programs, and add new languages. All they have to do is compile an ODS file and upload it to the USB port on the user interface using a flash drive.
Users can remotely interact with the device, including starting/stopping the duty cycle, using the EPoCA® cloud platform with Wi-Fi or Ethernet connectivity (alternative or parallel control can also be achieved via MODBUS TCP). The controller has an open frame board and a remote user interface consisting of a 5-inch (M) or 7-inch (L) capacitive TFT touchscreen graphic display made of glass, mounted horizontally, semi-recessed into the front or flush with the panel.
