Steam Pipe Flat Oven Controller

Vcolor 388 is a controller for steam tube deck ovens with central gas burner heating system. The controller has an open frame board and a remote user interface consisting of a 5" (M) or 7" (L) capacitive TFT touch screen graphic display made of glass, mounted vertically, semi-recessed in the front or flush with the panel. It has 15 outputs with electromechanical relays (expandable to 19 by installing up to 2 optional modules in dedicated slots on the main board) and can control 3 to 5 decks: temperature management as well as extraction of combustion and cooking fumes are centralized, while cycle duration, steam injection and exhaust are controlled individually for each deck.
The controller can save up to 99 recipes, each of which can be selected for any deck. Each recipe can have up to 8 stages, each with independent duration, steam injection and exhaust settings. Recipes can be changed, overwritten and saved directly from the display, and it is possible to set two different oven preheating set points for each day of the week, with two start/stop times scheduled for each set point. The recipes can be compiled in an ODS file (including pictures in BMP or GIF format) and uploaded to the controller using a USB flash drive, thanks to an innovative programmable platform that allows users to customize recipes and add new languages.
The controller has an oven cleaning function using pyrolysis, a self-cleaning mechanism that does not require chemical cleaning agents since food residues are oxidized at high temperatures.
The user can interact remotely with the device, including starting/stopping the duty cycle, using the EPoCA® cloud platform with Wi-Fi or Ethernet connection (alternative or parallel control can also be achieved via MODBUS TCP).
